hi,

Apart from the database is there anywhere else data is stored that needs to be backed up?

Yes:
$LAMS_HOME/chat
$LAMS_HOME/reports
$LAMS_HOME/simpleassessments
$JBOSS_HOME/server/default/deploy/upload.war

The first 3 are chat histories and submitted files. The last is the uploaded files (from Share Resources).

With the Windows installer, $LAMS_HOME by default is C:\lams\lamsdata, while $JBOSS_HOME is C:\lams\jboss.

The generic package (lams-server-1.0.2-{build}.zip) has by default, $LAMS_HOME=/usr/local/lams and $JBOSS_HOME=/usr/local/lams/jboss.

There are also 5-10 files containing your configuration scattered inside $JBOSS_HOME - ports, mysql access details, and so on. It's enough to simply place the above 4 directories in a new installation though, while importing your backed up database. The only configuration setting you need to worry about when doing this is if your install location is different from your backup, and whether your chat port is the same (the chat port is specified for each chat room, so if it changes, old chats will be inaccessible - you can update these if necessary though - http://www.lamsinternational.com/documentation/advanced_p.php?g=configure).
