I'm looking forward to a log out button in the future too. In the meantime, for cases where you are switching profile (eg, authoring in one account, then using a separate learner account to try things), you can use two different browsers to do this at the same time - that is, log in with your teacher account using Firefox, then log in with the learner account using Internet Explorer.

Of course, if all you want to do is just see how the learner side looks, then you can click "Preview" on the top right of the Authoring page.
