Yes, you can delete sequence from your own folder (have a look at the attach pict).

I think you might be talking about assigning students into groups? If so, choose a grouping activity and then select the option "Choose in Monitor" and that will allow the teacher/monitor to manually assign students into groups.

Also note that if what you want it so assign roles to students, then I would use a grouping activity, and then create a branching activity that uses this grouping to assign the students a set of activity according to their role/branch.
