HI Peter,
Unfortunately I don't think you can install LAMS thru cPanel as you need to have shell access to the linux server to run the installation scripts.
Sorry.

If I can figure out how to use SSH..
How do I do it then?

Thanks Ernie for the replies.
One more quick question - I have the company website installed on this server too. Is this going to allow me to make sure it doesn't nuke that installation? Can I have LAMS installed in a subdirectory (for example, I have moodle in org.au/moodle because joomla is in org.au/) - does that make sense?
I just don't want to overwrite what I already have installed.
Thanks.

This is all just a bit beyond me.
I can't even login to SSH with PuTTy. I have the cPanel password and I have set up a Public/Private key which I downloaded in PPK format.. and the server doesn't like my key.. Doesn't like my username..It just doesn't like me..lol..
I'd love to use LAMS because it looks and works (from the demo site at least) so much better than moodle. Moodle is clunky and ugly and not intuitive at all.
Not to be I guess.
Can't afford to use a hosted solution.. so I guess that is that..
